SAUCE:
1/4 c tahini
1/4 c cold water
1 tb lemon juice
salt
4 shakes Tobasco
SANDWICH DRESSINGS:
pickeled onions (optional)
cucumbers (optional)
radishes (optional)
tomatoes (optional)
parsley (optional)
lettuce (optional)
1. Soak the chickpeas overnight. Drain then blend in food processor until finely chopped. Add all other ingredients except flour and blend until coarsely pureed.
2. Remove to a bowl and stir in the flour.
3. With wet hands, form the mixture into patties, 2 inches in diameter. Let stand for 15 minutes before frying, or put into airtight container and freeze.
4. Pan fry for 3-4 minutes per side and serve with sauce in pita or with taboule, 2 patties per person.
