3 med-lrg tomatoes
1 large clove garlic
1/2 red onion
1 1/2 bell pepper
1 10-inch cucumber
1/2 tsp. salt
1-2 Tbs. red wine vinegar
1/4 c. olive oil
1 tsp. cumin seed, ground
1/4 tsp. cayenne
black pepper
additional olive oil (garnish) (optional)
chopped parlsey (garnish) (optional)
sprinkle Aleppo pepper (garnish) (optional)
Season: Summer
Start with 1 T red wine vinegar and taste for flavor balance, adding more as necessary.
If tomatoes are small, you may end up using, 6-8 tomatoes. Gypsy/lipstick peppers can replace bell peppers, will need 2-3. Can use a small-medium shallot to replace the half red onion.
