Pesto

Ingredients

2 1/2 c. loosely packed basil leaves

1/3 c. nuts

3 medium cloves garlic

1/2 c. grated Parmesan cheese

1/4 c. olive oil

1/4 tsp salt

black pepper

Directions

1. Process basil, nuts, garlic and parmesan cheese into a paste. Add olive oil until you like the consistency. Add salt and pepper to taste.

Notes

The nuts can be pine nuts or walnuts, lightly toasted. You can also add sundried tomatoes for variety.

Can use the same proportions with cilantro. Add a jalapeno and a squeeze of lemon juice for a zesty and different green pesto.
