Tabouleh

Ingredients

1 1/4 c. dry couscous

1/2 c. boiling water

1/3 c lemon juice

6 tbs. olive oil

1 tsp. salt

pepper

lots parsley

shallot or scallions

cucumber

tomato

green bell pepper

red bell

feta

Directions

1. Boil water while chopping veggies. If using shallot, slice and put in lemon juice.

2. Pour boiling water, lemon juice, olive oil, salt and pepper over the couscous.

3. Cover and let sit for 5 minutes.

4. Fluff with fork and add parsley and other veggies. Toss well. Add feta.

5. Chill for at least 30 minutes. Serve cold w/ hummus.
